Never Fail Brownies
 
4 eggs
2 c sugar
1 t vanilla
1 c butter, melted
7 T cocoa
1 c flour
1/2 c chopped nuts
 
melt butter and add to cocoa.  Mix rest of ingredients together in one bowl.  Spread in 9x13 greased and floured pan.  Bak approx 30 mins in 325 oven.  Front with chocolate frosting when cool.
 
Frosting:
1/2 c butter
2/3 c Hershey's cocoa
3 c powdered sugar
1/3 c milk
1 t vanilla
 
melt butter, stir in cocoa.  Add sugar and milk.  Beat well.  Add vanilla
Calories:  none - and they are deeeeeeeeeeee-lishous

Layered Lettuce Salad
 
In large bowl layer:
1 head lettece
1/2 cup chopped celery
1 package frozen peas
1 med. red onion - or to taste
 
Mix:
1/2 c mayonaise
2 T sugar
spread over top - DON'T MIX Salad
 
Add on top:
4 oz shredded cheddar acheese
8 slices of crumbled bacon
 
Let sit overnite or for several hours - mix just before serving
 

Red Rice
 
2 cups Basmati rice, rinsed thoroughly
2 cups water
1 cube sweet butter
1 can tomato sauce
 
melt butter in water and tomato sauce, bring to rapid boil.  Add rinsed rice.  Keep at medium flaim until liquid is absorbed just to the top of the rice.  Place paper towl over pot before putting on the lid.  Reduce flame to low and cook for 30 mins.

Rainy Day Mac N Cheese
 
16 oz cooked elbow macaroni
3 cups cream (heavy or whipping)
3 eggs
3 cups shredded mozzarella cheese
4-6 slices of provolone cheese
 
Preheat oven to 350.
Cook macaroni.
In large mixer combine cream and eggs, beat for 10 mins.
In large cassrole dish, add alternating layers of cooked macaroni and mozzarella cheese.  (Begin and end with macaroni.)  Pour cream and egg mixture over top of macaroni and cheese layers.   Add slices of provolone cheese.  Bake for 30 mins or until top is golden brown.

Beef "N" Tater Bake

Combine l l/2 # ground beef.
1 c soft bread crumbs,
1 beaten egg,
1/2 c chopped onion,
1/3 c ketchup,
1/2 tsp. salt,
1/8 tsp. pepper. 
Pat meatinto an 8 in. square baking dish.
Bake at 350 for 30 min.
Remove from oven.  Drain excess fat.

Combine 3 cps hot mashed potatoes and 3/4 c of American cheese (I used cheddar)  spread over meat
Top with 1/4 c of shredded cheese .
Bake for 20 more mins. or so.

Pumpkin Seeds
 
2 c unwashed pumpkin seds
1/2 t Worchestershire sauce
1-1/2 T melted butter
1-1/4 t salt
 
Preheat oven to 250.  In large shallow baking pan, combine pumpkin seeds, Worchestershire sauce, melted butter and salt.  Bake approx 2 hours stirring occassionally or until seeds are crisp and dry.  Eat
These are really good!!!

 NORSKE SØT SUPPE  
(Norwegian Sweet Soup)
 
½ cup Minute tapioca
2½ cups water
1 orange w/peel, sliced
1 cup seedless raisins
1 cup chopped apple
1 cup stoned prunes
½ tsp salt
1 stick cinnamon
1 Tbsp lemon juice
1 cup sugar
2 cups grape juice

Cut prunes, chop apple, and otherwise prepare fruit ready to add to pot. Add tapioca to boiling water, stirring frequently.* Quickly add rest of ingredients except grape juice, and boil gently until fruit is tender. When soup is done, add grape juice. Serve warm with rusks (dry toast). May be served cold as dessert; garnish with whipped cream and chopped nuts.

Other fruits may be added also, such as dried apricots and/or cranberries. Increase water by ½ cup for each additional cup of fruit. Watch carefully while cooking; it burns easily.

* These are the original directions. I find the tapioca thickens too quickly so the fruit doesn’t cook enough. I put fruit into the water, bring to boil, then add tapioca and sugar. Sometimes I use pearl tapioca, which doesn’t thicken and burn as fast. Then it can be added at the start.
